Mold on a sourdough starter jar: what it looks like, what is not mold, and when to throw it out

Mold on a starter is fuzzy, stands up off the surface, and comes in pink, orange, green, black or gray — on the starter or the glass above it. A dried crust, a gray skin or a dark liquid are not mold. If it is the real thing, the whole jar's contents go out: wash the jar and start again.

Almost every version of this question mentions the sides of the jar, and that detail is the tell. Mold rarely begins in the mass of a fed starter; it begins on what was left behind — the smear above the line, the splash under the lid, the ring at the rim. So the walls are the first place to look, and the easiest place to keep clear.

What mold on a starter actually looks like

Mold is a fungus, and what you see is the part that has grown up into the air: a stalk, and on top of it the spores that carry the color. That is why real mold has height. It is fuzzy, furry or velvety, it stands proud of whatever it grows on, and it catches the light differently from the paste around it. A colored patch that is perfectly flat is almost never mold; a patch with a nap to it almost always is.

The colors run the whole range. Pink and orange are the ones bakers are warned about most. Green, blue-gray and black are the bread-mold colors. White is the awkward one, because a white fuzz sits close to a dried flour crust in color — the difference is that the fuzz is raised and soft, and the crust is flat and hard.

Shape helps too. Mold grows outwards from a point, so it appears as spots or circles that spread — on a jar, often a few coin-sized patches on the wall above the starter, before anything shows on the culture itself.

Why it shows up on the sides of the jar first

A fed starter is a poor host. The culture makes acid at every feed, and that acidity is a large part of why a jar of flour and water can sit on a counter for years without spoiling. The mass at the bottom is wet, acidic and constantly renewed, and very little else gets established in it.

The walls are a different environment. Every rise leaves a film of starter on the glass above the level it fell back to. That film is thin, it dries fast, it is open to the air, and it stops being fed the moment the level drops away from it. It has lost the protection of the acid below, and it is exactly the kind of damp, exposed food surface that airborne spores settle on. The same goes for a splash under the lid, and for the rim.

So "mold on the sides of my sourdough starter jar" describes the most common case, not an unusual one. The starter underneath may look untouched; it does not matter. Spores travel through air, and a jar with mold on its wall is a jar with mold in it — the contents go out, for the reasons below. What the wall tells you is where the problem started, and that part is entirely in your hands.

Four things that are not mold

Four things get mistaken for mold, and each has a texture or a position that gives it away.

A dark liquid on top. Hooch — the liquid a hungry starter pushes up. Gray, brown or nearly black, liquid rather than fuzzy, on or just under the surface. It is a feeding signal, not a spoilage signal: pour it off and feed.

A dried crust or ring. Starter that dried on the wall or the surface is flour paste: pale, flat, hard, and it cracks rather than fluffs. It scrapes off in flakes. It is not mold, but it is where mold starts — the whole argument for scraping it down while it is still soft.

A gray skin after the fridge. A starter that has sat through a long fridge stint often develops a dull, slightly leathery gray surface. Flat, uniform, no fuzz, no spots. It is normal, and it goes as the starter is fed back up to strength.

Flecks of bran. Wholewheat and rye carry dark specks, and a starter fed on them is speckled all the way through from the moment it is mixed. Bran is flat, it is inside the paste rather than on it, and it was there yesterday.

If what you have does not fit one of the last four rows cleanly, treat it as the first.

The test that settles it

When a patch is ambiguous, three checks, in this order.

Look at it side-on, through the glass. This is the one thing a clear jar gives you that a crock or an opaque tub cannot. Hold the jar up with a window or a lamp behind it and look across the surface and along the wall, not down from the top. Height shows in profile: fuzz has a fringe against the light, a crust has a hard edge, a skin has none.

Ask whether it was there at the last feed. Bran was. A crust was building for days. Mold arrives between one feed and the next, on a surface you looked at yesterday.

Do not sniff it, and do not taste it. The USDA's guidance on moldy food says plainly that sniffing a moldy item can cause respiratory trouble, and smell does not separate mold from a hungry starter anyway — an unfed culture smells sharp and sour on its own. If you have already baked with a starter, only afterwards found mold in the jar, and feel unwell, that is a question for a doctor, not for a baking guide.

And the rule over all three: if you are still not sure, it goes. A starter is flour, water and a fortnight away from being replaced; nothing about it is rare enough to gamble on.

Why the whole jar's contents go out, not just the spot

The instinct is to scoop out the patch and keep the clean-looking starter underneath. That is the one thing not to do, and the reason is in how mold is built.

What you see is the top of the organism. Below it, the mold puts down root threads into whatever it grows on, and in a soft, wet food those threads run well below the surface, unseen. The USDA Food Safety and Inspection Service is direct about it: foods with a high moisture content can be contaminated below the surface, and it lists jams and jellies — acidic, sugary preserves most people would expect to be safe — under "discard", noting that microbiologists recommend against scooping out the mold and using the rest. A starter is wetter than jam, softer than jam, and full of gas pockets for a thread to follow. The USDA's exception, where you cut around the spot, is for firm, dense foods — hard cheese, a carrot — where it says mold generally cannot penetrate deep. A starter is the opposite of dense. There is no margin to cut.

The same applies to mold on the wall above a clean-looking starter. A fuzzy patch has already released spores into the air of the jar, and the acid below resists most of what lands on it without guaranteeing anything: molds can thrive in high-acid foods, and the USDA names jams, jellies, pickles, fruit and tomatoes. The contents go, and the jar gets washed.

Where it comes from, and how the jar keeps it out

Mold spores are in every kitchen. The USDA puts it plainly: molds are found in virtually every environment, indoors and out, year round, and their growth is encouraged by warm, humid conditions. You cannot keep spores off the jar; you can deny them somewhere to grow, and that comes down to four habits.

Leave nothing on the glass. Mold on the sides of a jar needs a film of dried starter to grow on. One pass of the spatula at each feed, before anything else goes in, and there is nothing on the wall for a spore to settle into. Straight walls mean one pass covers the whole side; a wide mouth means your hand and the spatula reach the rim, where residue otherwise collects. Keep the culture fed. The acid that protects the mass is only made while the culture is active. A starter left on the counter for a long stretch without food slowly loses that defence, and then the surface — not only the wall — becomes a place things can grow. If you are going away, it goes in the fridge, scraped down first, because molds can grow at refrigerator temperatures too, as the USDA notes.

Cover it, and keep the cover dry. A wooden lid resting on the rim, or a cloth cover held with a band, keeps airborne spores and dust off the surface while letting gas out.
