How to clean a sourdough starter jar without soaking it for hours
The single most common cleaning question in sourdough is really a prevention question. People ask how to get dried starter off a jar because they let it dry in the first place, and the fix is upstream of the scrubbing.
The daily scrape — the whole trick
At every feed, before you add anything, take the spatula once around the inside wall and pull everything down into the mass at the bottom. Ten seconds. Then feed on top.
That is it. A jar treated this way stays legible indefinitely, because nothing is ever left thin enough on the glass to dry. Skip it for a week and you are looking through a film — which defeats the purpose of a clear jar entirely.
Two things make this easy enough that you actually do it: straight walls, so one pass covers the whole side, and a wide mouth, so your hand and the spatula fit without knocking the rim. A jar that narrows at the top traps a ring above the reach of any spatula, and that ring is where the trouble starts.
Do you need to wash it at all?
Less often than you would think. The culture is highly acidic, which is precisely what keeps it stable, and feeding on top of the existing mass is the normal way to maintain a starter — not a shortcut.
A proper wash every few weeks is plenty for a counter starter. For a fridge starter, wash it whenever you do a full refresh, which might be monthly.
The signals that it is time: a dried ring you cannot scrape off, a film that makes the scale hard to read, or a smell that persists after feeding rather than mellowing.
The proper wash
Move the starter to a clean container first — a bowl or a second jar. Do not throw it out.
Hot water and a little soap. Dried starter is essentially flour paste; hot water softens it in minutes rather than the hours people expect. Wash, rinse thoroughly, and dry completely before the starter goes back. Residual water thins the culture and skews the ratio you have been keeping.
Avoid abrasive scourers. They will not meaningfully scratch glass, but they will dull a printed scale over time, and a scale you cannot read turns a graduated jar into an ordinary one.
Dishwasher. Fine if the glass is rated for it — ours is rated to 302 °F, which covers a normal cycle comfortably. Wooden lids are better washed by hand; a dishwasher cycle will dry them out and raise the grain over time.
Shifting starter that has properly dried
If a ring has set hard, do not attack it dry.

Overnight soaking is almost never necessary. If fifteen minutes of hot water plus a scrape has not shifted it, another fifteen will.
Cleaning the other pieces
The cloth cover is the item you wash most. Rinse it in hot water after each stretch of use and let it dry fully before it goes back on — a damp cover sitting on a jar is the one part of this kit that can genuinely go musty. Having a second one means the jar is never uncovered while the first dries, which is the main practical reason to own two.
The wooden lid wipes clean. Wash it by hand, dry it standing up, and keep it out of the dishwasher.
The spatula goes in the dishwasher without issue.
The thermometer strip stays on the outside of the glass. Wash around it rather than over it, and avoid scrubbing directly across it.
The chalk labels wipe with a damp cloth — that is the point of the erasable pen.
Two jars, and why some bakers keep a spare
There is a tidier way to handle the occasional deep clean, and it costs nothing but a second container: feed into a clean jar instead of washing the one in use.
At feeding time, put the discard-down portion straight into the spare, add flour and water there, and wash the first jar at your leisure. The culture never sits in a bowl waiting, nothing is rushed, and you always have a dry jar ready. Alternate the two and each one gets washed every other week without a single interruption to the routine.
It is not necessary — the scrape-and-feed approach works perfectly well on its own — but anyone who bakes weekly and finds the wash day mildly annoying tends to arrive at this arrangement eventually. If you keep one starter on the counter and a backup in the fridge, you are already running two jars anyway.
Why a clear jar makes cleaning self-correcting
There is a feedback loop here that is worth naming, because it is the reason a graduated glass jar stays cleaner than an opaque container in practice rather than in theory.
You see the film as it forms. A faint haze on the inside wall is visible days before it becomes a crust, and seeing it is what prompts the scrape. In an opaque container the same build-up is invisible until you look down into it, by which point it has dried on properly.
The scale amplifies this. Numbers you are reading twice a day become harder to read as the glass films over, so the deterioration announces itself in the one place you are guaranteed to be looking. A jar you read every morning is a jar you notice, and a jar you notice is a jar you keep clean.
What not to do
Do not use bleach or strong disinfectant. Residue is difficult to rinse out completely and the culture will notice. Hot water and ordinary dish soap, rinsed properly, is the whole requirement.
Do not pour boiling water into a cold jar. Thermal shock is the one realistic way to break glass in normal kitchen use. Hot from the tap is enough.
Do not start over because the jar looks grim. A dark liquid on top is hooch — pour it off and feed. A gray surface after a long fridge stint is normal. The only genuine reason to discard is pink, orange or fuzzy growth.
